Chill the bowl, whisk, and cream together in the freezer for fifteen minutes before starting; cold equipment lets fat globules link faster and produces more stable volume. For cocktail use, stop at soft peaks when the cream is thick but still pourable, because stiff peaks sink into hot drinks rather than floating cleanly. If you accidentally over-whip toward a grainy texture, fold in a splash of fresh cold cream to smooth it back out. History

Whipped cream has served as a cocktail topping since at least the 1940s, when chef Joe Sheridan developed the original Irish Coffee at Foynes Airbase in County Limerick, Ireland to warm passengers on long transatlantic flights. The drink reached the United States in 1952 through Jack Koeppler of the Buena Vista Cafe in San Francisco, who worked with travel writer Stanton Delaplane to recreate Sheridan's recipe. After initial failures to get the cream to float on hot coffee, Koeppler discovered that cream whips and floats better when roughly two days old, because subtle acidification alters its protein structure. The Buena Vista still serves about two thousand Irish Coffees every day using this method, and it remains the template for any cocktail garnished with floated cream.

Variations

Use powdered sugar in place of granulated for a slightly smoother texture and easier dissolving. Flavored versions shine in themed cocktails: a tablespoon of Irish cream liqueur turns it into a spiked topping for espresso martinis, a half teaspoon of ground cinnamon complements hot toddies, and a dash of orange liqueur suits Spanish Coffee drinks. For a dairy-free alternative, full-fat chilled coconut cream whips to similar volume with a distinct tropical flavor, and stabilized aquafaba produces a fat-free foam that even freezes well.
