History & Origin

The Agave Ginger Tonic uses agave syrup as its primary sweetener, referencing the agave plant's deep roots in Mexican culinary tradition. Agave — the succulent whose blue variant, Agave tequilana, produces tequila — has been cultivated in central Mexico for at least 11,000 years according to archaeological evidence, and the concentrated sweet sap harvested from the plant's core was a primary sweetener in Mesoamerican food before cane sugar arrived with Spanish colonizers. Commercial agave nectar emerged as a lower-glycemic alternative to refined sugar in the health food market of the 1990s, and its slightly caramelized, faintly floral sweetness became a valued cocktail and beverage ingredient. Combined with ginger's heat and tonic water's quinine bitterness, agave creates a sophisticated non-alcoholic spritz with genuine complexity.
