The Chirulin is one of Peru's most ancient pisco-based cocktails, originating in El Ingenio, a community in the Ica region with a centuries-long Afro-Peruvian heritage. For generations, locals prepared it in large clay pitchers called jarras and passed communal cups among friends and family during celebrations. The original recipe used pomelo, a thick-skinned citrus native to the region, combined with pisco and a cinnamon-spiced syrup. In 2024, Lima bartender Tatiana Flores introduced a shaken modern interpretation featured in PUNCH Magazine, swapping pomelo for fresh grapefruit and adding a splash of lime juice for brightness. The updated recipe brought this ancestral cocktail to contemporary menus while honoring its communal, celebratory roots.
