  1. 1Pour Sambuca into a shot glass.
  2. 2Float three coffee beans on top.
  3. 3Carefully light the Sambuca on fire.
  4. 4Let it burn for a few seconds to toast the beans and warm the liqueur.
  5. 5Extinguish by covering with your hand or a coaster.
  6. 6BLOW OUT FLAME BEFORE DRINKING. Drink while still warm.

History & Origin

Sambuca takes its name from the Latin word sambucus, meaning elderberry, a botanical that features in the liqueur's historical formulation. The modern form of the drink is most commonly traced to Luigi Manzi, who began producing sambuca in the town of Civitavecchia, near Rome, around 1850. As an anise-based Italian digestif it shares the same family of spirits as French pastis and Greek ouzo, but sambuca's higher sugar content and characteristic sweetness set it apart from its drier European cousins. The flaming presentation is rooted in the con la mosca service — sambuca with the fly — a ritual whose name derives from a disputed story connected to Federico Fellini's 1960 film set, where an actor allegedly dropped a coffee bean into a glass of sambuca and shouted there's a fly. Regardless of origin, the tradition codified: three whole coffee beans are placed in the glass before igniting the spirit, and the brief flame warms the beans and releases their aromatic compounds into the liqueur. The three beans carry symbolic meaning in Italian tradition, representing health, happiness, and prosperity — salute, felicità, prosperità. Flaming the shot also burns off a small amount of alcohol, concentrating the anise and toasted-coffee aromas that make this presentation so theatrical and immediately recognizable at any bar.
