History & Origin

Lavender — a flowering aromatic herb native to the Mediterranean basin — has been cultivated for fragrance, culinary use, and medicinal properties since ancient times. The Romans used lavender to scent bathwater, lending the plant its name from the Latin lavare, meaning 'to wash.' Culinary lavender, particularly the Lavandula angustifolia species, entered Western kitchens through the French herbal tradition of Provence, where it grows wild across hillsides and has been harvested commercially for centuries. The integration of lavender into beverages accelerated during the farm-to-table movement of the 2000s and 2010s, as bartenders and food producers sought botanical alternatives to conventional flavors. Lavender lemonade became a signature offering at farmers' markets before migrating into restaurant menus and cocktail bars. Its pastel purple color and delicate floral-citrus balance made it a natural choice for spring and summer non-alcoholic menus.
