  • ½ cupboiling water
  • ½ cupprosecco
  • ½ cuppeach schnapps
  • peach slicegarnish

The Peach Bellini Jello Shot adapts Giuseppe Cipriani's 1948 Harry's Bar creation into gelatin shooter form, preserving the white peach and prosecco combination in a party-ready presentation. Cipriani opened Harry's Bar with Harry Pickering at Calle Vallaresso 1323 in Venice in 1931 and created the Bellini in 1948, naming it for the 15th-century Venetian painter Giovanni Bellini, whose altarpieces and devotional works often featured a distinctive rosy-gold luminosity that recalled the drink's color when made with white peach purée rather than yellow peaches. White peaches — lower in acid and higher in aromatic esters than yellow varieties — produce a purée of particular delicacy whose sweet-floral character the original Cipriani formula specified; Cipriani's son Arrigo subsequently documented the recipe formally. The gelatin adaptation faces the same carbonation management challenge as all sparkling wine-based shots: prosecco used directly produces foam that prevents clean gelatin setting. The standard approach uses peach purée as the primary gelatin liquid — which sets cleanly — with a small amount of prosecco added at the end for flavor, producing a pale gold-pink shot of genuinely peachy character.
