The Sgroppino is a traditional Venetian cocktail and palate cleanser with roots in the aperitivo and digestivo culture of northeastern Italy. The drink — combining vodka, prosecco, and lemon sorbet in equal measure — has been served in Venice since at least the 19th century as a refresher between courses at formal meals, blending the effervescence of sparkling wine with the frozen acidity of citrus sorbet.
