The Whiskey Smash is an American cocktail whose origins in Jerry Thomas's 1862 Bar-Tenders Guide positioned it as a simplified julep: spirit, fresh mint, sugar, citrus, and crushed ice in a shorter glass than the standard Julep's tall silver cup. The Smash's defining innovation over the Julep was the addition of citrus — typically a lemon wedge muddled with the mint and sugar — which the Julep traditionally lacks. This citrus element fundamentally changes the drink's character, adding the acid that prevents the muddled mint and sugar from becoming simply sweet. The cocktail languished in relative obscurity through most of the 20th century before bartender Dale DeGroff — the seminal figure of the late 20th-century American craft cocktail revival who established his methods at the Rainbow Room in New York City from 1987 onward — championed the format as an excellent demonstration of the muddling technique. DeGroff's advocacy brought the Whiskey Smash back to professional and consumer attention, and it has been a consistent craft bar offering since. The muddling technique requires gentle pressing of herbs against the glass to release volatile aromatic compounds without shredding the plant material, which releases bitter chlorophyll.
