  • 1 wholeegg yolk
  • ½ ozsimple syrup
  • ½ ozheavy cream
  • Grated nutmeggarnish
Instructions
  1. 1Add bourbon, egg yolk, simple syrup, and cream to a shaker without ice.
  2. 2Dry shake vigorously for 15 seconds to emulsify the egg.
  3. 3Add ice and shake again for 15 seconds until well chilled.
  4. 4Double strain into a chilled coupe glass.
  5. 5Grate fresh nutmeg over the top.

The Flip is among the most ancient cocktail formats in the English-speaking world, with documented origins in the Colonial American tavern of the late 17th century. The earliest flips were hot drinks prepared by plunging a red-hot iron rod — called a loggerhead or flip-dog — into a mixture of ale, rum, molasses, and beaten egg, creating a frothed, slightly caramelized hot drink that was a staple of winter tavern service. The technique fell out of use as the cold flip became standard in the 19th century: spirit, sugar, and whole egg shaken vigorously together, producing a silky, foam-topped drink served without ice. Jerry Thomas documented the format in his foundational 1862 Bar-Tenders Guide, presenting both hot and cold versions across multiple spirit bases. Bourbon's barrel-derived flavor profile — vanillin from new charred oak, caramel and butterscotch from Maillard reactions in the toasted stave, coconut and peach lactones from the wood — makes it a particularly apt flip base. The fat and protein in the egg interact with the whiskey's sweetness in a way that amplifies rather than mutes the bourbon character, the yolk contributing richness and the white contributing foam. The sugar's role is moderating rather than dominant, keeping the drink balanced without sweetening it into dessert territory. The Bourbon Flip functions as an after-dinner drink, a nightcap, and a bridge between the cocktail and the egg-enriched drinks of the 19th-century punch tradition.
