While the Pisco Sour receives international recognition, the Chilcano is arguably Peru's most consumed pisco cocktail domestically. The drink evolved from the Italian Buongiorno, a mixture of grappa and ginger ale brought by Italian immigrants in the 19th century who later substituted local pisco for grappa. The name may derive from a popular Peruvian fish head soup, as both were considered hangover cures.
