The original Clover Club is one of America's great pre-Prohibition cocktails, named after a prestigious men's literary and social club that met at the Bellevue-Stratford Hotel in Philadelphia from the 1880s through the early 20th century. The drink — gin, lemon juice, raspberry syrup, and egg white — appeared in print as early as 1909 and was documented by Hugo Ensslin in his 1916 Recipes for Mixed Drinks. It faded after Prohibition decimated American cocktail culture but was revived by the modern craft cocktail movement, most notably through Julie Reiner's bar of the same name in Brooklyn, which opened in 2007.
