  • 2 ozwhite rum
  • 1 ozfresh lime juice
  • ΒΌ ozyellow chartreuse
  • Β½ ozsimple syrup

Instructions

  1. Add all ingredients to a cocktail shaker with ice.
  2. Shake vigorously for 12-15 seconds until well chilled.
  3. Double strain into a chilled coupe glass.

The Daisy de Santiago was immortalized by legendary travel writer Charles H. Baker Jr. in his 1939 masterwork "The Gentleman's Companion," where he called it "a lovely thing, introduced to us through the gracious offices of the late Facundo Bacardi." Baker discovered this pre-Prohibition gem during his visits to the Bacardi distillery in Havana, Cuba, where visitors were treated to complimentary cocktails in what he described as "a brilliant modern bar smart enough to make New York jealous." The drink is essentially a daiquiri elevated by Yellow Chartreuse, the French herbal liqueur made by Carthusian monks since 1737.
