The technical challenge was emulsification: fresh cream and alcohol are naturally incompatible, the fat separating from the liquid without stabilization. IDV's solution was a proprietary emulsifier system that maintained the product's homogeneous texture indefinitely during the shelf life of a sealed bottle. The product launched in 1974 under the Baileys Original Irish Cream name and became the world's best-selling liqueur by volume within a decade, a position it has held for most of its history. The homemade Irish cream shot — combining Irish whiskey directly with fresh cream and sweetener rather than using the commercial liqueur — recreates the essential flavor combination while sacrificing the emulsification stability that makes the bottled product consistent.
