Irish Eyes is a vivid green cocktail whose color carries the weight of Irish national symbolism in liquid form. Green became the color most associated with Irish identity through a specific historical moment: the Society of United Irishmen, founded in Belfast in 1791 by Wolfe Tone, Henry Joy McCracken, and other Protestant reformers inspired by the American and French Revolutions, adopted green as their identifying color — a choice that connected the Irish nationalist cause visually to the French revolutionary tricolor and gave the color its modern Irish political significance. The wearing of the green, as the phrase came to be known, expressed solidarity with Irish independence. The color's association with St. Patrick's Day emerged through a separate cultural pathway: St. Patrick's own historical emblem was the shamrock, a small three-leafed clover plant that he reportedly used to explain the Christian Trinity to Irish converts, and the shamrock's green became associated with the March 17th feast day.
