  3. 3Strain into a rocks glass over fresh ice.

The Irish Gold Rush is an Irish whiskey adaptation of one of the most influential cocktail creations of the modern era — the Gold Rush, developed by T.J. Siegel at Milk & Honey bar in New York City around 2000. Milk & Honey, opened by Sasha Petraske on New Year's Eve 1999 on Eldridge Street on the Lower East Side, was the bar most credited with establishing the template for the 21st-century craft cocktail revival, and Siegel's three-ingredient honey-bourbon-lemon formula became one of the first widely replicated modern classics, helping establish honey syrup as a standard cocktail sweetener. The original Gold Rush used bourbon — a Kentucky-distilled corn-forward whiskey whose caramel and vanilla barrel character paired particularly well with honey's floral sweetness. The Irish whiskey substitution produces a meaningfully different drink: Irish whiskey's triple-distilled grain profile is lighter and less caramel-forward than bourbon, allowing more of the honey's aromatic complexity to be audible against the spirit rather than competing with bourbon's own dominant sweetness. Irish pot still expressions — particularly those from Midleton Distillery or smaller producers like Redbreast or Green Spot — carry an apple and spice character that interacts differently with the honey and lemon than grain-forward bourbon does, giving the Irish Gold Rush a more orchard-fruit register.
