  • 2 ozamaro montenegro
  • ¾ ozfresh lemon juice
  • ½ ozsimple syrup
  • 1 wholeegg white
  • orange twistgarnish
Instructions
  1. 1Add all ingredients to a shaker without ice.
  2. 2Dry shake vigorously for 10 seconds.
  3. 3Add ice and shake again for 15 seconds.
  4. 4Strain into a chilled coupe glass.
  5. 5Garnish with an orange twist.

Amaro Montenegro was created by Stanislao Cobianchi in Bologna in 1885, following years of experimentation that drew on his travels through Europe, Asia, and the Americas collecting botanical recipes. Cobianchi named the finished liqueur in honor of Princess Elena of Montenegro, who married Italy's King Vittorio Emanuele III in 1896, and whose name was associated with refinement and European royalty at a moment when the brand was establishing its market identity. The liqueur's formula combines 40 botanicals including bitter orange peel, coriander, marjoram, petitgrain, cloves, and Artemisia, producing a flavor that is simultaneously floral, citrusy, warmly spiced, and gently bitter — a profile more approachable than many amari and more complex than most. The sour format — amaro, fresh lemon juice, egg white, and a small measure of additional sweetener — suits Montenegro particularly well because the liqueur's natural sweetness handles most of the sugar work while the egg white creates the silky, foam-topped texture that makes Italian amaro sours a distinct subcategory from standard spirit sours.
