  • ¾ ozfresh lime juice(freshly squeezed)
  • ¾ ozhoney syrup(1:1 honey to water)
  • lime wheelgarnish
Instructions
  1. 1Combine tequila, lime juice, and honey syrup in a shaker with ice.
  2. 2Shake vigorously until well chilled.
  3. 3Strain into a rocks glass over fresh ice.

Siegel at Milk & Honey in New York around 2000): that honey's complex floral sweetness and aromatic compounds produce a more interesting sour than refined sugar alone. The honey-agave pairing has specific natural coherence — both honey and agave are plant-derived sweeteners whose flavors reflect their botanical source materials in ways that refined cane sugar does not — and the combination of honey's floral esters with tequila's agave earthiness creates a layered sweetness that complements rather than competes with the lime juice's citric acid. The egg white, when included, provides the silky foam that the sour format's best versions produce through the protein denaturation of extended shaking, and its presence allows the honey's aromatic compounds to linger on the palate in a way that the more quickly consumed neat drink does not permit. Premium blanco or reposado tequila from 100% agave producers performs best in this format, as the spirit's quality is fully audible against the honey and lime without the masking effect of mixto tequila's neutral spirit content.
