History & Origin

Umeshu is one of Japan's oldest and most deeply rooted homemade liqueurs, with a production tradition closely tied to the introduction of ume fruit from China. The ume — a stone fruit related to both plums and apricots, though botanically closer to the latter — arrived in Japan from the Yangtze River basin during the Yayoi period, roughly 300 BCE to 300 CE, and quickly became significant in Japanese medicine, cuisine, and culture. The Heian-period medical text Ishinpou, compiled in 984 CE, documents the medicinal use of ume preparations, and pickled umeboshi remain a staple of the Japanese diet to this day. The tradition of steeping ume in alcohol to extract its flavor and medicinal properties developed during the Edo period (1603–1867), when shochu production became widespread enough to supply the high-proof base the steeping process required. Sake-based umeshu had been made in households before that, with records from the 1800s documenting the practice. The process is unhurried: whole unripe green ume are layered in glass jars with rock sugar, submerged in shochu at approximately 35% ABV, and sealed for a minimum of six months before the liqueur is ready. The rock sugar dissolves gradually, pulling the fruit's flavor through osmotic pressure rather than fermentation. The resulting liquid is sweet, lightly tart, and carries a subtle almond-like note from compounds in the ume pit. Mixing with soda creates a lighter, longer serve that makes the fruit's brightness more accessible.
