The Virgin Daiquiri preserves the most essential quality of one of the 20th century's most reproduced cocktails — the clean, bright balance of citrus acid against sweetness — while removing the rum that was the Daiquiri's original defining ingredient. The Daiquiri takes its name from a small Cuban mining village, Daiquirí, located near Santiago de Cuba in the Oriente province, where American mining engineer Jennings Cox is traditionally credited with improvising the combination of local white rum, fresh lime juice, and sugar around 1898 during the Spanish-American War period. The story has Cox running short of other spirits while entertaining American colleagues and producing a rum drink whose simple elegance outlasted the historical moment of its creation. The recipe was brought to the United States by Admiral Lucius Johnson, who introduced it to the Army and Navy Club in Washington, D.C. in 1909, and subsequently spread through American bar culture. Prohibition transformed the Daiquiri into a cocktail associated with Caribbean travel and sophistication, and the frozen Daiquiri format — popularized in Havana through the 1940s, particularly at La Floridita bar where Ernest Hemingway became its most famous devotee — gave the template its most commercially successful expression. The Virgin Daiquiri demonstrates that the format's pleasure was always rooted in the citrus-sugar balance that the rum framed rather than provided.
