Ramos's elaboration of the basic Fizz formula added egg white, cream, and orange flower water to the standard spirit-citrus-sugar-soda structure, requiring extended shaking and producing a foamy, ethereal drink so labor-intensive that Ramos employed teams of shakers, the drink passing from hand to hand to achieve the required texture. The Brandy Fizz follows the simpler core Fizz structure rather than Ramos's elaborate variation, but benefits from the same principle: the soda's carbonation lifts the brandy's aromatics, the lemon's acid brightens the stone-fruit character of the cognac, and the sugar integrates the elements into a coherent, refreshing drink. The format works particularly well with Spanish brandy de Jerez as an alternative to cognac, its nuttier, more oxidative character providing an interesting variation on the French original.
