The Brandy Scaffa belongs to the scaffa family - one of the most historically specific and least-understood drink categories in the American canon. A scaffa is served at room temperature, without ice or cold dilution, a surviving trace of pre-industrial drinking customs from before Frederic Tudor's Boston ice trade (launched in 1806 and expanded through the 1820s and 1830s) made ice a commercial commodity. Before then, cold drinks were seasonal or a luxury of private icehouses; the scaffa preserved room-temperature service into an era when chilling had become both possible and fashionable, making it a deliberate choice rather than a default. Jerry Thomas printed the first Brandy Scaffa in his 1862 Bar-Tenders Guide as an equal-parts build - one part brandy to one part maraschino, with two dashes of bitters - placing it in the Fancy Drinks section beside the closely related Brandy Champarelle. Two decades later, Harry Johnson's 1882 New and Improved Bartender's Manual recast the scaffa as a carefully layered, Pousse Cafe-style drink, floating the ingredients in stripes rather than stirring them together. Both readings survive. The version most often served today follows the stirred, brandy-forward interpretation - roughly two parts cognac to one part maraschino with a couple of dashes of bitters - which tempers the intense sweetness of an equal-parts pour while keeping the drink's concentrated, undiluted character intact. Its small serving suits an after-dinner, contemplative moment rather than a refreshing one.
