  • 1 wholeegg white

Instructions

  1. Combine all ingredients in a cocktail shaker without ice. Dry shake vigorously for 15-20 seconds to emulsify the egg white.
  2. Add ice to the shaker and shake again hard for 10-12 seconds until well chilled.
  3. Double-strain through a fine mesh strainer into a chilled coupe glass.
  4. Express a lime peel over the surface and discard or rest on the rim as garnish.
