Cachaça Sour

- 2 ozcachaca
- ¾ ozlime juice
- ¾ ozsimple syrup
- 1 wholeegg white
- Expressed lime peelgarnish
- 1Combine all ingredients in a cocktail shaker without ice. Dry shake vigorously for 15-20 seconds to emulsify the egg white.
- 2Add ice to the shaker and shake again hard for 10-12 seconds until well chilled.
- 3Double-strain through a fine mesh strainer into a chilled coupe glass.
