  • 1 ozgin(London dry style)
  • 1 ozapple brandy(calvados)
  • ½ tspabsinthe
  • ½ tspgrenadine(real pomegranate)
  • lemon twistgarnish
Instructions
  1. 1Combine gin and apple brandy and absinthe and grenadine in a shaker.
  2. 2Fill with ice and shake briefly.
  3. 3Strain into a chilled coupe glass.
  4. 4Garnish with a lemon twist.

History & Origin

The Dempsey Cocktail was named for Jack Dempsey — William Harrison Dempsey, born June 24, 1895 in Manassa, Colorado — who held the World Heavyweight Boxing Championship from July 4, 1919, when he defeated Jess Willard in Toledo, Ohio, to September 23, 1926, when he lost on points to Gene Tunney at the Sesquicentennial Exposition stadium in Philadelphia. Dempsey's seven-year reign coincided almost exactly with Prohibition and the Jazz Age, making him one of the defining celebrities of that era's particularly intense American sports culture. His aggressive, punching-forward style — which earned him the nickname the Manassa Mauler — and his working-class Colorado background made him a hero to immigrant and blue-collar communities across the country. Cocktails named for boxing champions were a standard commercial gesture in American bar culture of the 1910s and 1920s, and the Dempsey's formula — gin, Calvados, grenadine, and a dash of absinthe — reflects the adventurous multi-ingredient approach of pre-Prohibition professional bartending. The combination of gin's botanicals with Calvados's apple warmth, grenadine's pomegranate sweetness, and absinthe's aromatic bridge produces a drink of genuine complexity.
