  • 4 oztonic water(premium quality chilled)

  1. 1Fill a highball glass with ice cubes.
  2. 2Pour chilled tonic water over ice.
  3. 3Let espresso cool slightly for 30 seconds.

The Espresso Tonic was reportedly created in 2007 at a staff gathering at what would become Koppi Roasters in Helsingborg, Sweden, when baristas poured a shot of espresso over tonic water and discovered the combination was unexpectedly delicious. The high acidity and effervescence of tonic water amplified the espresso's fruity, floral notes — particularly in the light-roast specialty coffee style that Scandinavian roasters were championing during this period — while the quinine's bitterness harmonized naturally with the coffee's own bitter character. The drink spread rapidly through the specialty coffee community, becoming a signature summer offering at third-wave coffee shops worldwide by the early 2010s. Its visual appeal — a dark espresso cloud descending through clear sparkling tonic — contributed to its social media popularity.
