History & Origin

The French 125 is the cognac variation of the French 75, and its name plays on the same artillery metaphor that gave the original drink its identity — escalating the weapon from the 75mm to an even more powerful caliber to signal a stronger, more spirit-forward drink. The French 75 was named for the Canon de 75 modèle 1897, France's legendary quick-firing field artillery piece whose mechanical reliability and rate of fire made it the defining weapon of French artillery in the First World War. The cocktail was documented at Harry's New York Bar in Paris — the Rue Daunou establishment opened by Harry MacElhone in 1923 and already a center of expatriate American cocktail culture — where the combination of gin, champagne, lemon juice, and sugar was presented as a drink with the same devastating impact as a direct artillery hit. Harry Craddock published the recipe in The Savoy Cocktail Book (1930). The cognac version substitutes the gin's botanical dryness with brandy's fruit and oak warmth, producing a richer, more vinous champagne cocktail that leans toward the Kir Royale tradition of sparkling wine enhanced with a spirit. The French 125 name suggests that a cognac-based champagne cocktail hits harder than the gin version, the artillery metaphor doing double duty as both historical reference and honest warning about the drink's potency.
