History & Origin

The Irish Car Bomb is an American bomb shot combining a half-shot of Irish whiskey and a half-shot of Baileys Irish Cream, dropped into a pint glass of Guinness stout and consumed immediately before the Baileys curdles in the stout's acidity. The drink is a product of Irish-American bar culture in the United States, where it became a fixture of St. Patrick's Day celebrations and Irish-themed bars from at least the 1970s and 1980s onward. The name's reference to car bombings is considered deeply offensive in Ireland, Northern Ireland, and the United Kingdom, where the IRA's campaign of politically motivated bombings caused hundreds of deaths and widespread trauma through the decades of the Troubles (approximately 1968 to 1998). The drink is rarely ordered or served in Ireland or Britain and is received with significant hostility when requested, making it a specifically American phenomenon that exists largely outside awareness of the political context its name references. The combination's flavor — the Irish whiskey's grain warmth, the Baileys' dairy sweetness, and the Guinness's bitter roasted malt — is genuinely coherent, but the name carries irreversible associations for those directly affected.
