Limonada con Chia — lime water with chia seeds — draws on two separate ingredient traditions. Fresh-squeezed limeade (or the Mexican agua de limon) is one of Central America's most basic and beloved daily beverages, sold by street vendors and produced at home throughout Mexico and Guatemala. Chia seeds, from the Salvia hispanica plant native to central Mexico and Guatemala, were a staple food of the Aztec and Maya civilizations, who consumed them for sustained energy — Aztec warriors reportedly carried chia on long marches. Spanish colonizers documented chia's importance in Aztec diet in the 16th century, and the seeds were largely forgotten in mainstream nutrition until the 1990s and 2000s when research into their omega-3 fatty acid content brought them back to commercial prominence as a health food ingredient.
