  • 1 ozmezcal(espadin preferred)
  • 1 ozcampari
  • 1 ozsweet vermouth
  • orange peelgarnish
Instructions
  1. 1Add all ingredients to a mixing glass with ice.
  2. 2Stir for 20-30 seconds until well chilled.
  3. 3Strain into a rocks glass over a large ice cube.
  4. 4Express an orange peel over the drink and drop it in.

The Mezcal Negroni substitutes mezcal for the gin in the Negroni's equal-parts formula, producing a version of one of the 20th century's most influential cocktails whose smoky agave character creates an entirely new flavor experience while preserving the format's essential bitter-sweet-herbal balance. The Negroni was created in Florence around 1919 when Count Camillo Negroni asked bartender Fosco Scarselli at Caffè Casoni to strengthen his customary Americano by replacing soda water with gin. The resulting equal-parts combination of gin, Campari, and sweet vermouth became one of the most widely reproduced cocktail structures in history. Mezcal's relationship to the Negroni framework is specific and coherent: Campari's bitter citrus and sweet vermouth's herbal richness were designed to complement the botanical freshness of London Dry gin, but mezcal's smoke and agave earthiness engage with both components in a different but equally valid way. The smoke reads as a third bitter element alongside Campari's citrus bitterness, deepening the drink's complexity without simply doubling the bitterness. The sweet vermouth's herbal sweetness moderates both, and the result is a Negroni variation with an elemental, almost primal quality that the more precise gin version does not possess. The Mezcal Negroni became a flagship cocktail of the mezcal renaissance of the 2010s.
