History & Origin

The Morning Glory Fizz is an early 20th-century Scotch cocktail built around the Fizz format — spirit, lemon juice, sugar, and soda water — with the addition of egg white for froth and an absinthe rinse for aromatic complexity, designed as a morning restorative rather than an evening drink. The concept of the eye-opener — a morning cocktail taken as a stimulant and cure for the previous night's overindulgence — was a recognized social category in Victorian and Edwardian bar culture, and the Morning Glory Fizz was specifically positioned in this role by the American bartending guides that documented it in the early 20th century. The absinthe rinse, applied to the serving glass before the drink is built, releases anise-forward aromatic compounds whose stimulating associations made absinthe a natural component of morning cocktails in the pre-1912 American bar, when absinthe was legal and widely available. The egg white's protein foam creates a persistent, silky head that carries the absinthe aromatics and the lemon's citrus brightness upward to the nose as the drink is consumed. The Morning Glory Fizz appeared in multiple American bartending guides from the turn of the century onward and represents a specific approach to the Scotch whisky cocktail that prioritizes refreshment and aromatic interest over the spirit-forward gravity of the stirred Scotch cocktail family.
