History & Origin

Nimbu Pani — the Hindi words for lime water (nimbu: lime or lemon; pani: water) — is India's most ubiquitous warm-weather refreshment, a preparation so fundamental to Indian summer life that it exists in dozens of regional variations under names including Shikanji, Nimbu Sharbat, and Nimboo Paani across the country's linguistic diversity. The basic preparation combines fresh lime or lemon juice with water and sugar, but the specifically Indian elaboration adds black salt (kala namak, a sulfurous volcanic salt with a distinctive mineral flavor produced primarily in the Himalayan region), roasted cumin powder, and sometimes chaat masala — the tangy spice blend used throughout North Indian street food. These additions reflect the Ayurvedic principle that drinks should aid digestion and maintain the body's electrolyte balance, particularly important in the extreme heat of North Indian summers where temperatures regularly exceed 40°C (104°F) and heat stroke is a genuine public health concern. The combination of citric acid from the lime, sodium and other minerals from the black salt, and the digestive properties attributed to cumin produces a drink that genuinely addresses dehydration more effectively than plain water. Street vendors throughout India prepare and sell Nimbu Pani from improvised stands, the ritual of squeezing fresh limes into glasses of salted water with a practiced efficiency being one of the defining visual experiences of Indian street food culture.
