  • 2 ozcachaça
  • ¾ ozsweet vermouth
  • ½ ozcynar
  • 2 dashesangostura bitters
  • Orange twistgarnish
Instructions
  1. 1Add cachaça, sweet vermouth, and bitters to a mixing glass with ice.
  2. 2Stir well for 20-30 seconds until properly chilled and diluted.
  3. 3Strain into a rocks glass over a large ice cube.
  4. 4Express an orange twist over the drink and drop it in as garnish.

Rabo de Galo — rooster's tail in Portuguese — is one of Brazil's oldest documented cocktails, a two-ingredient combination of cachaça and sweet red vermouth that emerged from São Paulo's immigrant bar culture in the early 20th century. The drink was born in the working-class bars and botequins (neighborhood taverns) of São Paulo, where Italian and other European immigrants brought vermouth — the aromatized wine that was an essential element of their cocktail traditions — into contact with cachaça, the local spirit produced from fresh sugarcane juice since the 16th century. The combination that resulted was strikingly simple: the herbal, sweet complexity of Italian sweet vermouth providing the aromatic structure while cachaça's grassiness and cane character provided the spirit foundation. The resulting two-ingredient stirred drink operates in the same structural family as the Manhattan, the Rob Roy, and the Americano, but with a distinctly Brazilian base spirit. In November 2024, the International Bartenders Association officially recognized Rabo de Galo as a Contemporary Classic in its official cocktail list, acknowledging the drink's historical significance and its contribution to the global cocktail canon. The IBA recognition brought renewed international attention to a cocktail that had been a local São Paulo institution for over a century, establishing it alongside the Caipirinha as a benchmark representation of Brazilian cocktail heritage in the global drinks conversation.
