Instructions

The Old Fashioned itself is one of the oldest named American cocktail formats, with the term appearing in print by 1880 to describe a whiskey mixed with sugar and bitters in the old-fashioned way — a reaction against the increasingly elaborate mixed drinks of the late 19th century. The smoked variation layers a new technique onto a timeless template. Bourbon has a natural affinity with smoke because the spirit is aged in new charred oak barrels as required by American regulations, and that charring deposits toasted wood, vanilla, and subtle smokiness into the whiskey during maturation. Introducing smoke to the finished cocktail amplifies those existing notes rather than adding something foreign. Bartenders developed several methods: smoking guns that inject hickory or cherry wood smoke through a straw; inverted glass domes that trap smoke from burning wood chips placed inside; and occasionally smoke-infused ice or syrup. Each technique produces a slightly different character — smoke dome presentations give the most theatrical reveal, with a cloud billowing out as the glass is lifted. The technique spread from high-end cocktail bars into home bartending as consumer smoking kits became widely available.
