His practice of planting seedlings rather than grafting produced orchards full of small, tart apples suited primarily to pressing rather than eating. Pressed apple cider — the unfiltered, non-alcoholic version — has been a seasonal American staple since the colonial period and became commercially available through the 19th and 20th centuries from farm stands, orchards, and eventually supermarkets. Bourbon's natural barrel-derived character — vanilla, caramel, and spice — complements apple cider's tartness and fruit sweetness in a combination that recalls both the spiced apple cider of the harvest festival and the warm toddy tradition of the American winter.
