History & Origin

Aquavit has been distilled in Scandinavia since at least the 15th century, with records from Norwegian and Swedish monasteries documenting production of grain-based spirits infused with botanicals as far back as the 1400s. The word itself derives from the Latin aqua vitae, water of life, the same root that produced whiskey, whisky, and eau-de-vie across different European traditions. The defining botanical is caraway, giving Scandinavian aquavit its distinctive earthy, anise-adjacent character that distinguishes it from vodka or gin. Dill is also widely used, along with botanicals such as fennel, coriander, anise, and citrus peel depending on the producing region. Norway, Sweden, and Denmark each maintain distinct styles: Norwegian aquavit is often aged in oak and has a heavier, rounder profile, while Swedish styles tend to be lighter and more delicate. For centuries the spirit was genuinely believed to have medicinal properties, and it was common practice in Nordic farm households to offer aquavit with hot water, honey, and lemon as a remedy for cold weather ailments. This pairing — the same fundamental formula as the Hot Toddy — aligns naturally with aquavit's flavor profile, where the caraway's warming intensity interacts with honey's sweetness and citrus acid in a way that makes the hot serve feel almost purpose-built for the spirit.
