History & Origin

The Batida de Abacaxi is one of Brazil's most widely made and consumed cocktail traditions, applying the batida format — blended or shaken cachaça with fresh fruit and often sweetened condensed milk — to the country's most iconic tropical fruit. The word batida derives from the Portuguese verb bater, meaning to beat or shake, and the preparation's defining act is the vigorous blending or shaking that incorporates the fresh fruit into the spirit base. Cachaça, Brazil's national spirit distilled from fresh sugarcane juice, has been produced in Brazil since the 16th century — the first documented distillation of the spirit in the Portuguese colony dates to the 1530s or 1540s at the Engenho de São Jorge dos Erasmos in São Paulo state, making it one of the oldest distilled spirits in the Americas. Brazil is the world's largest pineapple producer, cultivating the fruit extensively in the states of Pará, Minas Gerais, and Paraíba, and fresh pineapple's combination of sweetness and acidity — derived from its malic and citric acid content — makes it one of the most natural pairings for cachaça's clean cane character. The addition of sweetened condensed milk, a product that Nestlé and the Brazilian food industry introduced to widespread domestic use through the 20th century, softens the natural acidity and binds the fruit and spirit into a creamy, indulgent drink that is simultaneously refreshing and substantial.
