The Brown Derby is a Hollywood cocktail from the pre-war Golden Age of Los Angeles bar culture, created at the Vendome Club on Sunset Strip around 1930 and named for one of the most famous restaurant chains in California history. The original Brown Derby restaurant opened in 1926 on Wilshire Boulevard in Los Angeles in a building shaped like a derby hat — a design attributed to founder Herbert Somborn, though the exact inspiration for the hat shape has been attributed variously to a publicity stunt, a bet, and a deliberate visual pun on the common expression that you can sell anything if the food is good enough, even if you serve it out of a hat. The chain became legendary as a gathering place for Hollywood stars, directors, and producers at its Vine Street location near the major studios, and it is credited with inventing the Cobb Salad in 1937. The cocktail combining bourbon, fresh grapefruit juice, and honey syrup appeared in W.C. Whitfield's 1941 drinks guide Here's How, which documented many of the cocktails circulating in California bar culture during that period. The three-ingredient combination is simple and well-balanced: grapefruit's tart citrus provides the acid, honey the aromatic sweetness, and bourbon the base.
