History & Origin

The Cachaça Mojito applies the structural logic of Cuba's most internationally recognized cocktail to Brazil's national spirit, a substitution that works because both cachaça and white rum are sugarcane-derived spirits sharing similar botanical starting points. The Mojito's documented roots in Cuba stretch to the 16th century, when an aguardiente-based preparation with lime, sugar, and mint was documented in Havana; the modern formula with white rum, lime, sugar, fresh mint, and soda water was established as a Havana bar staple by the early 20th century. White rum and unaged cachaça both derive from sugarcane but differ fundamentally in their production: white rum is made from molasses — the thick residue remaining after sugar is extracted from cane juice — while cachaça is distilled from fresh, unfermented cane juice. The distinction produces spirits with meaningfully different flavor profiles: rum's molasses base produces tropical, caramel-adjacent sweetness, while cachaça's fresh cane juice base produces a grassier, more vegetal, more floral spirit. In the Mojito structure, cachaça's fresh-cane quality amplifies the mint's herbal character in a more direct way than rum, the two green, plant-derived flavors reinforcing each other rather than the rum's sweetness dominating. The drink became a natural exploration for Brazilian bartenders building on their native spirit's compatibility with international formats.
