  • 2 ozwhite rum(traditionally aguardiente de caña)
  • ½ ozhoney(or honey syrup)
  • ¾ ozfresh lime juice
  • 1 ozwater(still or sparkling)
  • Lime wheelgarnish
Instructions
  1. 1Add honey and a splash of warm water to a clay cup or rocks glass.
  2. 2Stir until honey dissolves.
  3. 3Add lime juice and rum.
  4. 4Add ice cubes and stir to combine.
  5. 5Top with remaining water if desired.
  6. 6Garnish with a lime wheel.

The Canchánchara is documented as one of Cuba's oldest cocktails, with origins in the Ten Years' War (1868–1878) — the first of Cuba's independence struggles against Spanish colonial rule. The drink was consumed by mambises, the Cuban independence fighters who conducted guerrilla campaigns in the island's eastern Oriente province, who mixed aguardiente de caña (raw, unaged Cuban sugarcane spirit) with locally available honey and fresh lime juice to produce a warming restorative drink that could be made from ingredients accessible in rural Cuba during wartime. The town of Trinidad in Sancti Spíritus province, one of the oldest continuously inhabited cities in Cuba and a UNESCO World Heritage Site, maintains the Canchánchara's strongest living tradition: La Canchánchara bar on Calle Rubén Martínez Villena in Trinidad's colonial center serves the drink in the traditional style, using small earthenware clay cups called jicaras that slow the drink's warming and impart a slight mineral quality. The Canchánchara predates the Daiquiri, the Mojito, and all other internationally recognized Cuban cocktails, representing the oldest documented Cuban mixed drink. The International Bartenders Association added it to the New Era Drinks category in 2020, giving the pre-colonial preparation official international recognition alongside contemporary classics.
