History & Origin

The Chicago Cocktail is a pre-Prohibition brandy and champagne preparation named for one of America's most vital early cocktail cities — a place whose drinking culture in the late 19th and early 20th centuries was as sophisticated and inventive as New York or New Orleans. Chicago's pre-Prohibition bar scene was centered on the saloons, hotel bars, and clubs of the Loop and the Near North Side, where immigrant communities — German, Irish, Czech, Polish, and Italian among them — brought their own drink traditions while adapting to American patterns. The city's position as the rail hub of the nation meant that bartenders, liquor salesmen, and new spirits traveled through Chicago in ways that gave it unusual exposure to national and international drink trends. The Chicago Cocktail's formula — cognac with a dash of triple sec, Angostura bitters, and a sugar-rimmed glass topped with a float of champagne — represents the Gilded Age's taste for elaborate, luxury-signaling drink presentations. The sugar rim and champagne float each add sensory dimensions to a drink that would otherwise be a simple brandy cocktail: the sugar's sweetness is the first thing to touch the lips, the champagne's effervescence lifts the aromatics of the cognac and triple sec, and the Angostura's bitters provide depth. The champagne float specifically positioned the Chicago Cocktail as a celebration drink, appropriate for the toasting occasions and festive gatherings of a city that considered itself America's second city in every department including drinking.
