  • 4 ozwheat beer
  • ½ ozfresh lemon juice
  • ¼ ozsimple syrup
  • Lemon wheelgarnish

History & Origin

Kölsch is a pale, delicate, top-fermented ale produced exclusively in Cologne (Köln), the city on the Rhine in the North Rhine-Westphalia state of Germany whose Roman foundation as Colonia Claudia Ara Agrippinensium in 50 CE makes it one of the oldest continuously inhabited cities in northern Europe. The beer style has been brewed in Cologne since at least the early 20th century, and a major commercial development occurred in 1906 when the Cologne Brauerei Association first organized around the style. The Kölsch Konvention — a formal agreement among Cologne brewers — was signed in 1985 and established protected geographical indication (PGI) status for the name: only beers brewed within the Cologne metropolitan area using the top-fermenting method and the local strain of yeast may legally be called Kölsch. The beer is traditionally served in a cylindrical 200ml glass called a Stange (meaning rod or pole), and Cologne's beer halls replenish these small glasses continuously through a system managed by waiters called Köbes, who carry the glasses on round trays. Kölsch's clean, faintly fruity character — lighter in body and more delicate than an English pale ale — makes it a versatile cocktail beer, its subtlety responding to citrus additions without being overwhelmed. The cooler format adds lemon or lime juice and a sweet modifier to the beer's clean base, producing a gentler version of the shandy or radler tradition common across German-speaking Europe.
