The Lemon Drop Jello Shot adapts the beloved Lemon Drop shot — created by Norman Jay Hobday at San Francisco's Henry Africa's bar in the 1970s to taste like a lemon drop candy — into gelatin form. The lemon flavor translates especially well to jello shots because lemon gelatin is one of the original Jell-O flavors, dating to the brand's founding in Le Roy, New York in 1897, and the citrus acid from lemon juice simultaneously provides bright flavor and helps the gelatin set firmly. A sugar rim on each shot glass recreates the Lemon Drop's signature candy coating, maintaining the dessert-candy character that made the original cocktail so recognizable. The shot became popular in the late 1990s and 2000s when the Lemon Drop Martini was at peak cultural visibility.
