The Liberty Cocktail is a patriotically named pre-Prohibition American drink that combines applejack — one of the country's oldest domestic spirits — with rum and a small measure of grenadine. The patriotic naming convention reflected the heightened American nationalism of the years surrounding the First World War: the United States entered the war in April 1917, and the period between 1914 and 1920 produced a wave of liberty-themed cocktails, war-bond drives, and commercial products invoking national identity. Applejack, produced in New Jersey and New England since the colonial period, was among the most thoroughly American spirits available: the Laird family's New Jersey operation, documented from 1698 and licensed commercially in 1780, was built on apple orchards that predated the republic itself. Rum, distilled from Caribbean molasses and dominated by New England merchants through the colonial era — Providence, Newport, and Boston were major rum-importing and re-distilling cities in the 18th century — was the other historically foundational American spirit. Combining the two in a cocktail echoed the colonial punch tradition, where rum and apple brandy were frequently paired as locally available spirits in equal-parts formulas. The grenadine's small addition provides sweetness and color, bringing the drink's red-tinged appearance into alignment with its patriotic name.
