The Lime Drop Shot draws directly from the Lemon Drop, which bartender Norman Jay Hobday created at Henry Africa's bar on Van Ness Avenue in San Francisco in the early 1970s. Henry Africa's was the first of the fern bar establishments that transformed American casual dining — warm, plant-filled spaces that defined the post-1960s bar experience. Hobday designed the Lemon Drop to taste like a lemon drop candy while still delivering a proper vodka kick, presenting it with a sugar rim and a chilled, citrus-forward profile. The Lime Drop substitutes fresh lime juice for lemon, shifting the flavor toward the more tropical, Margarita-adjacent acidity of fresh lime while retaining the sugar-rimmed glass and sweetened vodka structure.
