Reverse Martini

The Reverse Martini inverts the ratio of the standard Dry Martini — typically six parts gin to one part dry vermouth, or sometimes less — making dry vermouth the primary component and gin the modifier. The inversion requires the same quality of vermouth that the conventional ratio obscures: where a standard Dry Martini can accommodate undistinguished or improperly stored vermouth because it appears in such small quantities, the Reverse Martini makes vermouth's quality and freshness the central determinant of the drink's character. Dry vermouth — produced in France's Savoie region and Languedoc by producers including Noilly Prat (whose Marseillan production dates to 1813), Dolin (established in Chambéry in 1821), and others — is a fortified wine infused with aromatic botanicals, and when fresh and properly refrigerated it carries a genuinely complex, delicate flavor of dried herbs, white fruit, and subtle sea-salt minerality that disappears within days of opening without refrigeration. The Reverse Martini emerged from the craft cocktail movement's systematic rehabilitation of vermouth as a serious ingredient in its own right, a campaign that involved educating consumers to store vermouth in the refrigerator after opening and to replace it regularly — fundamental habits that most American bartenders had abandoned during the decades when vermouth was used only as a symbolic gesture.
