The Rose Cocktail built on kirsch — the clear, unaged cherry brandy distilled from fermented Morello cherries — applies the fruit brandy's concentrated stone-fruit intensity to a vermouth-and-liqueur framework that was fashionable in pre-Prohibition American and European bars. Kirsch, whose full German name is Kirschwasser (cherry water), has been produced in the Black Forest region of Baden-Württemberg, the Alsace region of France, and the cantons of Switzerland bordering both territories since at least the 16th century, with the first documented Schwarzwälder Kirschwasser distillation references dating to 1764. The spirit is produced by fermenting small, tart Morello cherries — Prunus cerasus, the sour cherry variety — including their stones, then distilling the mash in copper pot stills. The stones' benzaldehyde contributes an almond-cherry aromatic quality to the finished spirit that distinguishes kirsch from sweeter, more fruit-juice-forward cherry liqueurs. The Rose Cocktail's combination of kirsch's dry, intensely aromatic cherry character with dry vermouth's herbaceousness and strawberry liqueur or grenadine's sweetness produces a drink of considerable complexity and elegance, the three components each contributing a different dimension of fruit, wine, and botanical flavor.
