Mexico's honey production tradition predates European contact by millennia: the Maya of the Yucatán Peninsula maintained sophisticated apiculture based on native stingless bees, primarily Melipona beecheei, whose honey was used in ceremonial beverages, trade, and medicine for at least three thousand years before Spanish missionaries introduced European honeybees (Apis mellifera) in the 16th century. Today Mexico is among the world's top ten honey exporters, producing significant quantities of tropical flower and citrus blossom honey in the Yucatán and the humid states of the Gulf Coast and Pacific slope. Tequila's Denomination of Origin — formally declared by the Mexican government in 1974, restricting production to Jalisco and portions of four neighboring states using blue Weber agave (Agave tequilana Weber) exclusively — created the regulatory framework within which premium agave spirits developed. A honey shot paired with tequila celebrates both the indigenous agave tradition and the pre-Columbian bee culture whose products have coexisted in Mexican cuisine and drink for centuries.
