The Tequila Shot is the stripped-to-essentials expression of Mexico's most internationally recognized spirit — a measured pour of tequila served in a shot glass for immediate consumption, which in Mexico is typically a sipping experience rather than the quick-shooting ritual associated with American bar culture. Tequila is distilled exclusively from the blue Weber agave (Agave tequilana Weber azul), a succulent plant that requires seven to ten years of growth before harvest, whose hearts (piñas) are cooked, crushed, fermented, and distilled under regulations established by Mexico's Denominación de Origen Tequila, formally declared in 1974 and administered by the Consejo Regulador del Tequila (CRT). Production is legally restricted to Jalisco and small portions of Guanajuato, Michoacán, Nayarit, and Tamaulipas. The tequila category divides into blanco (unaged), reposado (2-12 months in oak), añejo (1-3 years), and extra añejo (over 3 years), each producing spirits of fundamentally different character. In traditional Mexican tequila culture, a small caballito glass of blanco or reposado is accompanied by a sangrita chaser — a sweet, sour, and spicy combination of tomato, citrus, and chili — rather than the lime-and-salt ritual that dominates international service.
