Instructions
- Add the Irish whiskey, sweet vermouth, and orange bitters to a mixing glass.
- Fill the mixing glass with cracked ice and stir for 20–25 seconds until well chilled.
- Strain into a chilled coupe or cocktail glass.
- Express the oils from an orange peel over the surface of the drink, then use as garnish.
📜 History
The Emerald is one of the oldest Irish whiskey cocktails on record, appearing in Jacques Straub's cocktail compendium "Drinks" published in 1914. The same drink also appears under the name "Rory O'More" in Mr. Boston's Official Bartender's Guide, paying homage to Sir Rory O'More, one of the key figures in the 1641 Irish Rebellion. Built like a Manhattan but substituting Irish whiskey for rye and orange bitters for Angostura, The Emerald earned the nickname "the Irish Manhattan" among bartenders. It has seen a modern revival through craft cocktail bars including The Dean Bar in Providence, Rhode Island.
