Instructions
  1. 1Fill a highball glass three-quarters full with cubed ice.
  2. 2Add fresh lime juice and simple syrup directly into the glass.
  3. 3Pour ginger beer over the ice — do not stir yet.
  4. 4Gently stir once with a bar spoon to lightly combine.
  5. 5Garnish with a lime wedge on the rim and serve.

The Virgin Dark and Stormy removes the rum from Bermuda's national cocktail while retaining the ginger and lime combination that gives the drink its character. The Dark and Stormy was created in Bermuda using Goslings Black Seal rum — produced by the Gosling Brothers company that has operated in Bermuda since 1806, when Ambrose Gosling arrived from England as a wine and spirits merchant — and Barritt's Bermuda Stone Ginger Beer, which had been produced on the island since 1874. British Royal Navy sailors stationed in Bermuda were understood to be among the earliest regular consumers of the rum-and-ginger-beer combination, with ginger's traditional use as a seasickness and digestive remedy making the pairing both medicinal and pleasurable. The Gosling family has registered Dark 'n' Stormy as a trademark in the United States and several other markets, specifying that the authentic drink requires Goslings Black Seal rum — making it one of the few cocktails with a legal brand specification. The trademark was registered in 1991. The non-alcoholic version retains the format's sensory logic: ginger beer's aggressive heat and carbonation alongside lime's acid creates a genuinely bold drink that requires no alcohol for its character to be evident, making it one of the most naturally satisfying non-alcoholic cocktail adaptations.
