Aquavit, whose name derives from the Latin aqua vitae (water of life), has been distilled in Scandinavia since at least the 15th century; a 1531 Norwegian letter from a Danish lord to the Archbishop of Nidaros refers to aqua vitae as a medicine for virtually every ailment. The spirit is grain or potato-based and must contain caraway or dill as its defining botanical, with the specific herbal character varying dramatically by country: Norwegian aquavit is typically aged in sherry or bourbon casks that add complexity; Swedish aquavit tends to be lighter and unaged; Danish aquavit falls between the two. Elderflower — the blossom of the Sambucus nigra tree, which grows abundantly across Europe and was used in folk medicine and cooking since at least the medieval period — became a mainstream cocktail ingredient following the 2007 launch of St-Germain elderflower liqueur, which made the botanical accessible to bars worldwide.
